Sapph’s Pea and Ham Soup

250 g lean bacon (or ham)
1 large onion, diced
3 cloves garlic, crushed (or just some minced garlic from a jar)
1 carrot, diced
2 sticks celery, sliced
250 g split green peas
6 cups water (or combination water/chicken/vegie stock)
1/2 cup coriander leaves, finely chopped (optional)
Ground black pepper

Rinse peas

Add bacon, onion and garlic to a large pot and cook for 5 minutes. Add vegetables, split peas and water/stock. Bring to the boil, cover and simmer for 2 hours, stirring occasionally.

Just before serving, stir through coriander and black pepper.

Serve with a crusty bread roll or croutons. Serves 4-6

    This soup is so good - which is why I submitted it when Sapph didn’t. Hmmm, think I might be making it again this afternoon!
